Daytona 500 dip

 

Super Bowl may have come and gone but the Daytona 500 calls for some serious munchies too. This dip is edge-on spicy for the serious race fan and because it's done in a crock pot, it will keep going as long as the race does!
 
 
Georgia-Florida Dip (crock pot dip)
 
 
1 cup mushrooms
1 cup onions
7 jalapeno peppers
1/2 cup olives
1 big Velveeta cheese
1 tube hot sausage
1 cup sour cream
 
Brown sausage in frying pan, drain. Melt the cheese in the crock pot on LOW. Add the sour cream, stir. Dice "tiny" mushrooms, onions, olives and jalapenos. Add all to the crock pot on LOW heat. Best with corn chips!

 

Grilled Fish Sandwiches

 

What's better than starting off the racing season than with some seafood? As Daytona approaches, it seems that a fish sandwich would fit the bill. And with this wave of warm weather, grilling this fish will be a great start. Courtesy from our friends at Taste of Home:

 

 

 

Ingredients

  • 4 cod fillets (4 ounces each)

  • 1 tablespoon lime juice

  • 1/2 teaspoon lemon-pepper seasoning

  • 1/4 cup mayonnaise

  • 2 teaspoons Dijon mustard

  • 1 teaspoon honey

  • 4 hamburger buns, split

  • 4 lettuce leaves

  • 4 tomato slices

Directions

  • Brush both sides of fillets with lime juice; sprinkle with lemon-pepper. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill fillets, covered, over medium heat or broil 4 in. from the heat for 5-6 minutes on each side or until fish flakes easily with a fork.

  • In a small bowl, combine the mayonnaise, mustard and honey. Spread over the bottom of each bun. Top with a fillet, lettuce and tomato; replace bun tops. Yield: 4 servings.
